Heat olive oil in a large skillet over medium-high heat until shimmering.
Add chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown and crispy.
Flip the chicken and cook for an additional 5 minutes until juices begin to release.
Reduce heat to medium and pour the honey-garlic mixture over the chicken, coating evenly.
Cover and simmer for 15-20 minutes, checking that the internal temperature reaches 165°F (75°C).
Remove the lid during the last few minutes to thicken the sauce, spooning it over the chicken.
Once cooked, let the chicken rest for 5 minutes before serving.
