  • 2 cups Cooked Chicken, shredded Use leftover rotisserie chicken or poach some chicken breasts.
  • 1 can (10.5 oz) Cream of Chicken Soup Adds a rich and creamy texture.
  • 1 cup Chicken Broth Opt for low-sodium broth.
  • 3 cups Tortilla Chips, crushed Creates a delightful crunch.
  • 2 cups Shredded Cheese Preferably a blend of cheddar and Monterey Jack.
  • 2 cups Bell Peppers, chopped A mix of green and red for color and sweetness.
  • 1 medium Onion, finely chopped Sauté for natural sweetness.

Spices

  • 1 teaspoon Garlic Powder
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Cumin

Seasonings

  • to taste Salt and Pepper Adjust according to preference.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, add olive oil and sauté the chopped onion for 3-5 minutes until translucent.
  • Add the chopped bell peppers and sauté for an additional 4-5 minutes until softened.
  • Stir in the shredded chicken, cream of chicken soup, and chicken broth until well combined.
  • Season with garlic powder, chili powder, cumin, salt, and pepper. Mix thoroughly.
  • In a large bowl, combine crushed tortilla chips with half of the chicken mixture.
  • Spread half of the tortilla chip mixture in a greased baking dish and sprinkle with one cup of shredded cheese.
  • Add the remaining chicken mixture on top of the cheese layer.
  • Top with remaining tortilla chips and cheese.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
  • Let sit for 10 minutes before serving. Garnish with fresh cilantro if desired.

Notes

For a spicier kick, add diced jalapeños or a splash of hot sauce. This casserole is also great for meal prep and can be frozen for up to 2 months.
