Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add olive oil and sauté the chopped onion for 3-5 minutes until translucent.
Add the chopped bell peppers and sauté for an additional 4-5 minutes until softened.
Stir in the shredded chicken, cream of chicken soup, and chicken broth until well combined.
Season with garlic powder, chili powder, cumin, salt, and pepper. Mix thoroughly.
In a large bowl, combine crushed tortilla chips with half of the chicken mixture.
Spread half of the tortilla chip mixture in a greased baking dish and sprinkle with one cup of shredded cheese.
Add the remaining chicken mixture on top of the cheese layer.
Top with remaining tortilla chips and cheese.
Cover with aluminum foil and bake for 30 minutes.
Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
Let sit for 10 minutes before serving. Garnish with fresh cilantro if desired.
Notes
For a spicier kick, add diced jalapeños or a splash of hot sauce. This casserole is also great for meal prep and can be frozen for up to 2 months.
