Instructions
Preheat your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
Let the garlic cool slightly, then squeeze the cloves into a mixing bowl.
Add chickpeas, tahini, lemon juice, salt, cumin, and cold water to the bowl. Mash with a fork or potato masher.
Transfer the mixture to a food processor. Drizzle in olive oil while processing until smooth. Add more water if necessary.
Taste and adjust seasoning if needed. Serve in a dish, drizzle with olive oil, and garnish as desired.
