  • 1 can (15 ounces) Chickpeas Drained and rinsed.
  • 1 whole head Garlic Roasted.
  • 1/4 cup Tahini
  • 2 tablespoons Fresh Lemon Juice Juice of one medium lemon.
  • 3 tablespoons Olive Oil Extra virgin.
  • 1/2 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Ground Cumin
  • 2 tablespoons Cold Water Add more as needed for consistency.

Instructions
 

  • Preheat your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  • Let the garlic cool slightly, then squeeze the cloves into a mixing bowl.
  • Add chickpeas, tahini, lemon juice, salt, cumin, and cold water to the bowl. Mash with a fork or potato masher.
  • Transfer the mixture to a food processor. Drizzle in olive oil while processing until smooth. Add more water if necessary.
  • Taste and adjust seasoning if needed. Serve in a dish, drizzle with olive oil, and garnish as desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. The flavors will develop over time.
