Instructions
Prepare your ingredients and trim excess fat from chicken thighs.
In a medium bowl, combine minced garlic, honey, soy sauce, rice vinegar, ground ginger, and sesame oil. Whisk until well blended.
Place chicken thighs in the slow cooker, spread out evenly.
Pour the sauce mixture over the chicken, ensuring each piece is well coated.
Cover and cook on low for 6-7 hours or high for 3-4 hours.
Do not lift the lid during cooking to preserve heat and moisture.
Check the chicken's internal temperature 30 minutes before serving; it should reach 165°F (75°C).
If desired, thicken the sauce by removing chicken and turning the slow cooker to high for 15-20 minutes.
Return chicken to the slow cooker to soak in the thickened sauce for 10 minutes.
Serve chicken on a platter, drizzling sauce over the top and garnishing with chopped green onions.
