Instructions
1. Boil a large pot of water with a pinch of salt. Add 8 ounces of spaghetti or noodles and cook until al dente, about 8-10 minutes.
2. Mince 6 to 8 cloves of garlic and prepare the other ingredients.
3. Reserve 1 cup of pasta water, then drain and rinse the noodles under cold water.
4. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Sauté the minced garlic for about 30 seconds until fragrant.
5. Add 1 to 2 teaspoons of red chili flakes and stir to combine.
6. Add the drained noodles to the skillet and toss with the garlic and chili mixture.
7. Drizzle in 4 tablespoons of soy sauce and 2 tablespoons of sesame oil, tossing to coat the noodles.
8. Remove from heat and add chopped green onions, tossing again.
9. Garnish with fresh cilantro if desired and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently.
