Place the pot over medium heat and bring to a gentle simmer.
Reduce heat to low and cook uncovered for 30-40 minutes, stirring occasionally.
Check for doneness by scooping some jam; it should coat the back of a spoon.
If too chunky, use an immersion blender to puree to desired texture.
Remove from heat, taste, and adjust seasoning if necessary.
Pour warm jam into sterilized jars, seal tightly, and cool to room temperature.
