Instructions
 

  • Wash the ripe tomatoes thoroughly, remove stems, and chop into small pieces.
  • In a large pot, combine chopped tomatoes with sugar and stir gently.
  • Add minced garlic, chopped chili peppers, and lemon juice to the pot and stir well.
  • Sprinkle in salt, ground cumin, and smoked paprika, and stir to blend.
  • Place the pot over medium heat and bring to a gentle simmer.
  • Reduce heat to low and cook uncovered for 30-40 minutes, stirring occasionally.
  • Check for doneness by scooping some jam; it should coat the back of a spoon.
  • If too chunky, use an immersion blender to puree to desired texture.
  • Remove from heat, taste, and adjust seasoning if necessary.
  • Pour warm jam into sterilized jars, seal tightly, and cool to room temperature.
