  • 1 cup ricotta cheese Choose whole milk ricotta for a creamier consistency.
  • 1/2 cup grated Parmesan cheese Freshly grated cheese will melt better.
  • 2 cloves garlic, minced Use fresh garlic for the best flavor.
  • 1 teaspoon dried oregano Feel free to use fresh oregano if available.
  • 1 teaspoon salt Adjust according to your taste.
  • 1/2 teaspoon black pepper Freshly ground pepper adds a mild kick.
  • 2 tablespoons olive oil Used to sear the chicken before baking.
  • 1/2 cup shredded mozzarella cheese Mozzarella melts beautifully and adds a gooey texture.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Then, add the fresh spinach and cook until wilted, approximately 3-4 minutes. Remove from heat and let it cool slightly.
  • In a mixing bowl, combine the sautéed spinach and garlic with the ricotta cheese, Parmesan cheese, dried oregano, salt, and black pepper. Mix until well combined.
  • Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet, gently pound the chicken to an even thickness, about 1/2 inch thick.
  • Season the chicken breasts with salt and pepper on both sides.
  • Take a generous portion of the spinach filling and place it in the center of each chicken breast. Fold the sides of the chicken over the filling and secure with toothpicks or kitchen twine.
  • In a large oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  • Once the chicken is seared, sprinkle shredded mozzarella cheese on top of each breast. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Remove the skillet from the oven and allow the chicken to rest for 5 minutes before serving.

Notes

Ensure all ingredients are fresh and of high quality for the best flavor. You can prepare the stuffed chicken ahead of time and refrigerate for up to 24 hours before baking.
