Instructions
 

  • Prepare a baking sheet by lining it with parchment paper.
  • In a medium saucepan, combine the granulated sugar, light corn syrup, and peanut butter. Heat over medium, stirring until well combined and boiling.
  • Remove from heat and stir in the chocolate chips and vanilla extract until smooth.
  • In a large mixing bowl, add the crispy rice cereal and pour the chocolate mixture over it. Fold gently to combine.
  • Use a cookie scoop to form small balls and place them on the prepared baking sheet.
  • Sprinkle confectioners' sugar over the tops while still warm.
  • Let cool at room temperature for about 30 minutes or refrigerate to speed up the process.
