Instructions
Prepare a baking sheet by lining it with parchment paper.
In a medium saucepan, combine the granulated sugar, light corn syrup, and peanut butter. Heat over medium, stirring until well combined and boiling.
Remove from heat and stir in the chocolate chips and vanilla extract until smooth.
In a large mixing bowl, add the crispy rice cereal and pour the chocolate mixture over it. Fold gently to combine.
Use a cookie scoop to form small balls and place them on the prepared baking sheet.
Sprinkle confectioners' sugar over the tops while still warm.
Let cool at room temperature for about 30 minutes or refrigerate to speed up the process.
