Instructions
1. Prepare strawberries by rinsing them gently and patting them dry. Remove green tops and cut them into halves or quarters.
2. In a blender, puree the chopped strawberries until smooth. Strain through a fine-mesh sieve to remove seeds.
3. Heat heavy cream in a saucepan until simmering. Remove from heat and add chopped semisweet chocolate. Let sit for a couple of minutes.
4. Stir until smooth, then add vanilla extract and strawberry puree. Mix thoroughly to create ganache.
5. Transfer ganache to a bowl, cover with plastic wrap, and refrigerate for about 2 hours until firm.
6. Once firm, scoop out portions and roll into balls. If too soft, refrigerate again briefly.
7. Prepare coatings in shallow bowls. Roll each truffle in cocoa powder, crushed nuts, or shredded coconut.
8. Place coated truffles on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.
9. Store in an airtight container in the refrigerator for up to a week.
Notes
For variations, consider adding lemon zest, using different types of chocolate, or incorporating freeze-dried strawberries for extra flavor.
