Simple Air Fryer Southwest Chicken Burritos
These burritos are packed with juicy chicken, zesty spices, and a medley of fresh vegetables, all wrapped in a soft tortilla and cooked to perfection in an air fryer.

Ingredients
Main Ingredients
- 1 pound Boneless Skinless Chicken Breast Cut into small cubes.
- 1 can (15 ounces) Black Beans Drained and rinsed.
- 1 cup Corn Frozen or canned, thawed if frozen.
- 1 cup Diced Bell Peppers Red, yellow, or green.
- 1 small Onion Finely chopped.
- 2 cloves Garlic Minced.
Spices
- 1 teaspoon Cumin
- 1 teaspoon Smoked Paprika
- 1 teaspoon Chili Powder
Wrapping and Topping
- 4 large Flour Tortillas
- 1 cup Shredded Cheese Cheddar or Monterey Jack.
- to taste Sour Cream or Greek Yogurt For serving.
Instructions
- Prepare all ingredients: Dice chicken, rinse beans, thaw corn, chop peppers and onion, and mince garlic.
- In a skillet, heat oil over medium heat. Sauté onion for 3-4 minutes until translucent, then add garlic and cook for 1 minute.
- Add chicken to the skillet, sprinkle with spices, and cook for 6-8 minutes until fully cooked.
- Stir in black beans, corn, and bell peppers. Heat through for another 3-4 minutes.
- Remove from heat and let filling cool for a few minutes.
- Preheat air fryer to 375°F (190°C).
- Assemble burritos: Place filling and cheese in the center of each tortilla, fold sides, and roll tightly.
- Spray air fryer basket with cooking spray, place burritos seam-side down, and cook for 10-12 minutes, flipping halfway.
- Remove burritos from air fryer and let sit for a minute before serving.
- Serve with sour cream or Greek yogurt.
